Role Overview:

To excel as our Sushi Chef, you’ll embody the following qualities:

Key Responsibilities:

  • Sushi Crafting and Presentation: Masterfully create sushi rolls, nigiri, and sashimi with impeccable presentation to delight guests.
  • Ingredient Preparation and Sourcing: Skillfully select, source, and prepare premium ingredients like fish, rice, and vegetables, ensuring the highest quality.
  • Quality Control: Uphold the highest standards of freshness, taste, and food safety in every dish, ensuring a memorable culinary experience.
  • Customer Interaction and Satisfaction: Engage with customers at the sushi bar, understand their preferences, and provide a personalized dining experience.
  • Kitchen Sanitation and Safety: Maintain a spotless kitchen by adhering to health and safety regulations in all food preparation and storage areas.
  • Team Collaboration and Training: Collaborate seamlessly with kitchen staff and train Junior Chefs to maintain consistent quality and foster teamwork.

Skills and Expertise:

  • Culinary Training: Expertise in sushi-making techniques, knife skills, and Japanese cuisine through specialized training.
  • Knife Mastery: Exceptional proficiency in Japanese knife skills, particularly in filleting and cutting fish with precision.
  • High-Volume Experience: Proven hands-on experience in high-volume sushi kitchens or high-end Japanese restaurants.
  • Creativity and Presentation Skills: Inventive in crafting new sushi combinations and presentation styles, balancing aesthetics and taste in plating.
  • Food Safety and Sanitation: Deep understanding of food safety and sanitation practices, especially when handling raw seafood.
  • Efficiency Under Pressure: Ability to consistently deliver high-quality dishes efficiently in a fast-paced environment.
  • Passion for Japanese Cuisine: Enthusiastic about Japanese culinary traditions, with a drive to continually learn and refine techniques.
  • Language Skills: Must be proficient in English, with additional proficiency in Spanish being a plus.
  • Footwear: Non-slip shoes are mandatory for a safe working environment (please note that the company does not provide).
  • Work Authorization: Authorized to work in the United States.
  • Age: Must be at least 18 years of age.
  • Transportation: Must have reliable transportation.

Physical Requirements:

  • Manual Dexterity: Skilled in both gross and fine manipulation, ensuring precision in handling sushi knives and ingredients.
  • Vision Acuity: Peripheral vision and near/far visual accuracy are crucial for sushi preparation.
  • Hearing Ability: Effectively hear and respond to instructions in a bustling kitchen environment.
  • Lifting, Pushing, and Pulling: Capable of handling and moving objects weighing up to 80 pounds.
  • Standing and Walking: Able to stand and walk for extended periods while maintaining focus and precision.
  • Flexibility and Mobility: Ability to bend, stoop, kneel, twist, and move fluidly around the kitchen.
  • Tolerance to Environmental Conditions: Comfortable working in diverse temperatures (hot, humid, cold) and tolerating moderate amounts of dust and cleaning agents.
  • Allergy Tolerance: Able to handle a wide variety of fresh ingredients without adverse allergic reactions.
  • Step-Stool and Ladder Use: Confidently utilize a step-stool or ladder as needed.
